A Spanish-inspired eatery featuring tapas, pintxos, and sparkling cava cocktails is Brilliant Lady’s new restaurant.

This brand new restaurant offers a Spanish cuisine dining experience featuring the vibrant culinary traditions of Spain. Honoring the region's communal dining traditions, Rojo by Razzle Dazzle will offer small plates of tapas and pintxos, which are small plates meant to share. Spanish-inspired beverages, including sparkling cava cocktails, will also be available for purchase.

Virgin Brings On Top Culinary Partners

Virgin teamed up with several acclaimed chefs for this new concept including Justin Severino – a four-times James Beard Foundation Award nominee – and Nate Hobart. The two co-chefs at Morcilla, a Spanish-style charcuteria in Pittsburgh, are bringing their ingredient-driven, sharable dining creations to sea, including several of their favorite recipes. Rojo’s new menu will feature Morcilla’s famed Oxtail Montadito with braised oxtail, caramelized onion, mahón cheese, and a crostini. This discovery through cuisine is sure to delight Sailors with a variety of Spanish-inspied options.

New Rojo by Razzle Dazzle Beverage Program

The Spanish-inspired flare doesn’t stop at the food either — the understated but glamorous restaurant concept also features beverage inspiration from iconic bars in Spain’s hottest cities including Barcelona, Madrid and San Sebastian. Sailors can select from artisanal vermouths, vibrant sangrias, well-paired sherries and sparkling cava spritzes to sip on.

Spanish-American Breakfast and Brunch on Brilliant Lady

Fans of the original Razzle Dazzle dining concept can rest easy because they will still find a variety of options from their favorite signature brunch items. Brilliant Lady will feature elements of Razzle Dazzle on its breakfast and lunch menu. In addition to new dishes like jamon croquettes, some of the original brunch favorites, including the acai bowl, pastries, and frittatas, will still be available. Additional dining options for breakfast and brunch include The Wake, The Galley, and Ship Eats in-room food delivery. Light bites and grab-and-go boxes are also available for pick up throughout the ship.

Foodies Flock to Virgin Voyages

Rojo by Razzle Dazzle isn’t the only refreshed culinary experience coming to the Virgin Voyages fleet. Italian-themed eatery Extra Virgin is pairing existing Sailor favorites with new pastas, arancini, seafood risotto, roasted monkfish and other iconic dishes. At Gunbae – the only Korean BBQ at sea – new items include kimbap rolls, bulgogi fire meat and bo ssam, which is a whole roasted pork butt with oysters and caviar.

With no main dining room, buffet, or specialty restaurant upcharges, Virgin Voyages takes a unique approach to onboard dining. Sailors can dine at 20+ all-included eateries, ranging from elevated favorites like Mexican restaurant Pink Agave, the steak and seafood concept The Wake, to casual eateries like The Pizza Place and The Dock House featuring small plates. In addition, all onboard tips, basic WiFi, soda, water, non-pressed juices, teas, and drip coffee, group fitness classes, and most entertainment are also included in the voyage fare. These inclusions can be worth up to $1,000, so Sailors receive an excellent value when sailing with Virgin.

Future Dining Updates Expected

Rojo by Razzle Dazzle is the second new dining concept to launch inside Razzle Dazzle on Virgin's fleet of four ships. The first was a Chinese concept called Lucky Lotus, which Scarlet Lady received during dry dock at the end of 2024. Valiant Lady is expected to also receive a new concept in this space during her dry dock in Fall 2025. Which culinary region do you think she’ll feature? We’re hoping to see a Greek-style concept! Regardless of the style of cuisine, it’s sure to be an elevated dining experience.

Brilliant Lady’s Destinations and Itineraries

Setting sail from New York in September 2025, Brilliant Lady will feature itineraries ranging from 4 to 17 nights in new destinations, including Bermuda, Quebec, Cartagena, Santa Barbara, and Ketchikan, Alaska. Hallmarks of the new itineraries are longer stays and overnights at many of the 150+ destinations Virgin Voyages calls on. In addition, Brilliant will offer more than 90 new port excursions, from caving diving to whale watching.

Additional Innovative Experiences

In addition to the lively restaurant update, Brilliant Lady also features brand new entertainment ranging from a dinner theater production to a celebration of Virgin Records music. Happening Cast-led events are also getting a refresh, with more than 20 new activations. As if that wasn’t impressive enough, Virgin Voyages' newest ship, Brilliant Lady, also features an entirely new type of cabin, the Slightly Smaller Sea Terrace, which has two iconic red hammocks instead of one! A disruptor from day one, Virgin has always pushed the boundaries of what’s possible at sea and Sailors love the brand for it. Structurally, Brilliant Lady is almost identical to her three sister ships, with the only difference being that the ship's hull is slightly narrower to be able to pass through the Panama Canal.
